Quick pasta dough recipe

This is a quick and easy pasta dough recipe that will make you wish you had started making your own pasta a long time ago.

Get this basic recipe under your belt, and then you can experiment with so many other flavours and even move onto making your own ravioli and get creative with different fillings.

With this recipe you will use one egg to one cup of flour. Although 00 flour is the recommended product for pasta, I can't get it here in Peru, the only flour available is plain flour. I have to say though, it works well. For better results it is better to sieve the flour first. Sometimes you may need to add a little olive oil depending on how absorbent the flour is.

Ingredients for 6 servings

  • 3 cups plain flour
  • 3 medium eggs
  • Pinch of salt
  1. Place all the ingredients into your food processor with the dough paddle attached and blend until a silky dough is formed. If the mix still looks dry add a dribble of olive oil. (some flours react differently due to humidity or lack of moisture in the atmosphere).
  2. Remove the dough and place covered in the fridge for 20 mins before working with it.
  3. Using your pasta machine for rolling, work with 1/3 of the dough. start with the widest rollers and run through once. Fold the rolled dough over itself and feed through again on the widest rollers. keep lightly flouring so that the dough does not stick. Work down the numbers on your machine one by one until desired thickness is achieved. (No.1 is usually the widest and for normal pasta No. 6 should be sufficient).
  4. once desired thickness is achieved you can now cut the pasta using attatchments for your machine. Cook straight away or hang to dry.
